Delicious Banana Fritters recipe: A sweet treat for any time

Banana Fritters

Ingredients:

4 - 5 ripe soft bananas

1 teaspoon vanilla essence

1 teaspoon cinnamon sugar

2 eggs

½ heaped cup flour

A pinch of salt

Method:

Mash the bananas, vanilla essence, and cinnamon sugar until mushy and creamy.

Whisk your eggs in a large bowl; add in the banana, flour, and salt. Mix until well combined. Spray a frying pan with spray and cook and warm on a low heat. Once warm, add in 1 tablespoon of oil and swirl it around the pan to coat it. Add a tablespoon of batter and use the back of the spoon to slightly shape it. Fry for 3 - 4 minutes on a low heat until golden brown, and flip and fry. Transfer to a paper towel to soak up the excess oil and sprinkle with cinnamon sugar while it's hot.

Chicken and Vegetable Soup

Ingredients:

1 large onion

1 cup celery

1 cup parsley

1 leek

1 turnip

1 red pepper 

2 green chillies 

1 large clove of garlic

½ thumb-sized piece of ginger 

1 tin cream-style corn

1 thick veg soup powder

500ml water

*Add all the above ingredients to a food processor or blender, and blend until fine and pulpy.

Additional Ingredients 

2 tablespoons butter

3 chicken fillets (cubed)

1 tablespoon Cajun spice

Salt and pepper to taste.

1 punnet baby marrows sliced into chunks.

1 punnet of small baby button mushrooms (sliced)

2 carrots, peeled and roughly chopped.

2 chicken stock cubes or 1 packet of creamy chicken soup (optional)

Method:

In a large pot, add the butter, chicken, and Cajun spice and braise until the chicken is well coated in spice. Add in the mushrooms, marrows, carrots, and fine veg and top with 1-2 litres of boiling water. (Depending on how thick you prefer your soup.) Bring to a boil while stirring continuously. Once it boils, reduce the heat and simmer on a low heat for 15-20 minutes, stirring occasionally. Season with salt and pepper (omit salt if you are adding stock or soup powder).
